Hejsan Allesammans!! I'm kimi eklund, an American Girl with a Swedish Heart! My culinary expertise is in the Restaurant Business, managing a large summer resort in Sweden together with my husband Staffan, MAGASINET, on the island of Smögen, then having owned two fabulous restaurants in Salt Lake City, ABSOLUTE! Restaurant & Brasserie and Dijon Bistro Provencale. We sold the restaurants in 2004 and moved to sunny Arizona where I am currently writing recipes for my upcoming Scandinavian Cookbook! I have also created my food & travel lifestyles website, www.kimistyle.com, which is full of cooking videos, showcasing my wonderful Scandinavian and Mediterranean Inspired recipes! There are also travel videos from some wonderful wineries in Napa Valley and from the Glass Factories, Kosta Boda and Orrefors in Sweden!
